Dinner tonight – Sweet and Sour Prawns

This is a 20 minute meal – it is 100% home made and look at how nice it is! Because it isn’t a jar sauce it had delicious layers of fresh flavours with no crazy ingredients like you may get at a takeaway. Of course, you can substitute chicken, pork or an extra load of vegies. I just cook with whatever I have on hand and serve it with a load of rice – and always is perfect for lunch the next day.

All I did tonight was put on a pot of rice, cook up a capsicum, a carrot and an onion. Threw in some pineapple pieces and then the prawns. In a separate pot I made my no-fail home made sweet and sour sauce –

3/4 cup of white sugar
1/3 cup white vinegar
2/3 cup water
1/4 cup soy sauce
2 tablespoons of cornstarch
1 tablespoon of ketchup

Once upon a meal, I made the mistake of pouring the whole pot of my sauce into the pan and it was way too strong. I put enough in to comfortably coat all the ingredients and then hold back and keep it to the side, otherwise the sauce can drown the dish. Mmmmmm!!
