Last Friday we had a beautiful snow storm here that created the most delightful snowflakes ever… they weren’t really flakes they were puffs! It was like cotton wool balls slowly falling from the sky. Just beautiful! I tried to capture it in photos but snow like this doesn’t photograph as beautiful as it looks… so here it is anyway.
Snow days are perfect for home chores and cooking. I decided to bake a date loaf. I used to bake this all the time back in Australia and never made it here. Time to change that!
I didn’t have enough brown sugar on hand but we did have molasses so I made my own brown sugar – it tastes exactly the same and is a perfect standby! Here are the chopped dates and and brown sugar –
Then I just had to pour boiling water over the mixture which also includes some margarine – not butter.
Then I just put in the spices with a little baking soda and mixed it up. I also threw in a stack of chopped walnuts.
I then had to make my own self raising flour and that turned out fine so I mixed that in and then put it in the loaf pan.
Put it in the oven for a while…
And then here it is – it smells amazing and gets better as the days go on. When it is wrapped in foil it get so sticky on the top… just perfect!
This was the real end result… yummmmm!
