The cake

I LOVE WEDDING CAKE!

When I say this I mean, rich rich fruit cake with a thick almond icing after all, this is what wedding cake is right?

Um no.

Not in America.

When we started talking about the cake I was very much “Well we can just get it from anywhere – no-one hardly eats it so what does it matter where it comes from?” Bill was absolutely horrified. Wedding cake here is a BIG deal. I had no idea whatsoever so the cake became Bill’s job.

We selected Coccadots in Albany for our cake maker. They are awesome… the shop smells like heaven and everyone there is so nice and everything they make is delicious! When we dropped in to do the order, I sat back and let Bill go to work. The other girls in the shop were horrified… “You are letting him organize it?!” “Wow… this is a new idea!” It was so funny… Bill knows his cakes and honestly I wasn’t even worried and was happy as he took this job very seriously!

He decided upon a vanilla cake with chocolate mousse filling and buttercream icing.

The funny thing is that recently the news has been reporting on the upcoming Royal wedding and the comments on TV about the fact they are having fruitcake have been hilarious. Fruit cake is definitely not popular here at all.. I think it is time I try and change that!
