This is a bit of an adapted meal of a fabulous dish that I have been making for years.
I remember looking for different for salmon recipes when I moved over here and stumbled on Giada’s Whole-Wheat Spaghetti with Lemon, Basil, and Salmon.
I used it as an ‘impress Bill’ meal and I think it worked a treat! 😉 For our dinner on Friday night, I was just going to bake the salmon and have some veggies… but I also wanted pasta so made do with what we have. In this I used campanelle instead of long spaghetti, didn’t have fresh basil available, I sautéed the spinach instead of putting the pasta over it and had to skip the capers. It didn’t feel nearly as decadent as usual, but being a Friday in Lent, that isn’t a bad thing. This meal is a winner and is SO easy I could do it with my eyes closed. Between the spinach, lemon, garlic and beautiful salmon, this is one of my favorite ways to eat it. If you like salmon, you’ve got to give this a whirl!
