My brave husband #happy365

One big load of happy happy happy happy – Bill is going to be ok. His heart went into atrial flutter tonight and we rushed uptown to New York Presbyterian. Every time I have been with him for any hospital visit he is nothing short of amazing. His patience and demeanor while getting poked, prodded, questioned and worked on is amazing. The perfect patient… and husband!

We’ve been customers here for three years and still going strong. It is kind of bad too as we don’t end up going anywhere else! It is so much fun being regulars of a place and them knowing what we order! Our happy place!

Buonanotte Papa Benedetto #happy365

This is a happy365 where I am happy for someone else.

Tonight, we lit the candles we got in our Year of Faith packs in Rome and we have them burning below our papal blessing. When Pope Benedict announced his retirement, we decided we would use these candles for him on his last day.

So this happy365 is because I am happy for him. He will have some peace and solitude at this time of his life. The stage he described today as "His Final Journey". I will miss him so much.

OHMIGOSH I SAW GREG KELLY! #happy365

I was walking to the subway after work and chatting to mum on my phone. I looked up and saw someone familiar and it took me two seconds to realize… GREG KELLY!

I just started saying "Ohmygoshohmygoshohmygosh" on the phone to mum until I said "Greg Kelly is right in front of me… I’ll CALL YOU BACK!!" I turned around in time to catch a snap of him walking away.

That is him carrying the parcel.

*happy dance*

Far Out, Brussel Sprout! #happy365

I love walking past the Garden of Eden on my way home as they always have the fruit and vegies displayed so nicely!

This tub of brussel sprouts was a first… I love that they are giving some attention to one of my favorite vegies ever.

Carrot and Ginger Soup #happy365

This is one of my favourite recipes and just perfect to make when you have loads of carrots! Other bonuses, it freezes really well and is a great lunch soup. I could put ginger in everything – the fragrance of this soup is just beautiful! Perfect for this time of year.

Here is the original recipe from Real Simple. I always do without the cream and dill – as you can see from the thickness, it is a really satisfying soup. YUM!

A great meal for Lent #happy365

This is a bit of an adapted meal of a fabulous dish that I have been making for years.

I remember looking for different for salmon recipes when I moved over here and stumbled on Giada’s Whole-Wheat Spaghetti with Lemon, Basil, and Salmon.

I used it as an ‘impress Bill’ meal and I think it worked a treat! 😉 For our dinner on Friday night, I was just going to bake the salmon and have some veggies… but I also wanted pasta so made do with what we have. In this I used campanelle instead of long spaghetti, didn’t have fresh basil available, I sautéed the spinach instead of putting the pasta over it and had to skip the capers. It didn’t feel nearly as decadent as usual, but being a Friday in Lent, that isn’t a bad thing. This meal is a winner and is SO easy I could do it with my eyes closed. Between the spinach, lemon, garlic and beautiful salmon, this is one of my favorite ways to eat it. If you like salmon, you’ve got to give this a whirl!
